Method
Build the Crumb Crust
- Combine graham cracker crumbs and melted butter until the mixture resembles damp sand.
- Press the mixture into the bottom of a 9x9-inch baking dish and refrigerate.
Whisk Together the Lemon Pudding
- Whisk the instant lemon pudding mix with cold milk for about two minutes until thick.
Mix the Lemon Cheesecake Filling
- Beat softened cream cheese and powdered sugar until smooth.
- Mix in lemon pudding, lemon juice, vanilla extract, and lemon zest until fully combined.
- Gently fold in 1 1/2 cups of whipped topping.
Layer Everything Together
- Spread half of the lemon cheesecake filling over the chilled crust.
- Spoon the blueberry pie filling over the cheesecake layer.
- Add the remaining cheesecake filling on top and smooth it out.
Chill Until Fully Set
- Cover with plastic wrap and refrigerate for at least six hours, ideally overnight.
Decorate and Serve
- Spread or pipe remaining whipped topping on top and garnish with blueberries, lemon slices, and a dusting of powdered sugar.
- Slice into squares and serve chilled.
