Preparation
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan generously.
- In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined, then set aside.
- In a large bowl, cream together the granulated sugar and softened butter with a hand mixer for about 2 minutes.
Mixing
- Add the milk, sour cream, egg, lemon juice, lemon extract, and grated lemon peel to the creamed mixture and mix until smooth.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Fold in the raspberries gently with a spatula.
Topping and Baking
- In a small bowl, combine the sugar and flour for the crumb topping, and cut in the softened butter until crumbly.
- Spoon the batter into the prepared pan and sprinkle with crumb topping.
- Bake for 45-50 minutes or until a toothpick comes out clean.
Cooling and Glazing
- Cool the cake in the pan for at least 20 minutes before removing.
- Whisk together the powdered sugar and lemon juice for the glaze and drizzle it over the cooled cake before serving.
