Preparation
- Heat 2 tablespoons of olive oil in a large pot or deep skillet over medium heat. Add the sliced leeks and cook for about 3 to 5 minutes until soft and fragrant, but not browned.
- Add the orzo and kosher salt, then pour in enough water to cover the orzo by an inch. Bring to a gentle boil and cook according to package instructions, stirring occasionally.
- A minute or two before the cooking time is up, stir in the asparagus and peas. Cover and let cook for an additional 2 minutes.
- Drain off any excess water, leaving the orzo lightly coated.
- Turn off the heat and let it rest covered for about 5 minutes.
- Stir in the baby spinach and cover again for 1 minute to wilt.
- In a small bowl, whisk together the remaining olive oil, lemon juice, lemon zest, and grated garlic until smooth.
- Pour the dressing over the orzo and vegetables, then gently stir to combine. Fold in feta if desired.
- Taste and adjust salt as necessary and serve warm or chilled.
Notes
Store leftovers in an airtight container for up to three days. To serve again, add a splash of olive oil or lemon juice if it's dry. The flavors improve overnight.
