  • 3 large eggs Bring to room temperature before using.
  • 1 teaspoon vanilla extract
Dry Ingredients

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your springform pan with butter and line the bottom with parchment paper.
  2. Measure all ingredients before mixing to prevent mistakes.
Mix Dry Ingredients
  1. Whisk together the flour, baking powder, and salt until evenly combined.
Beat Wet Ingredients
  1. In a large bowl, whisk together sugar and eggs until pale and fluffy.
  2. Add melted butter, ricotta, vanilla, limoncello, lemon juice, and lemon zest. Mix until smooth, being careful not to overmix.
Combine Everything
  1. Gradually add the dry ingredients to the wet ingredients and fold gently with a spatula until no dry flour remains.
Fill the Pan
  1. Pour the batter into the prepared pan, spreading the top evenly. Tap the pan lightly on the counter.
Bake
  1. Bake for 50 to 60 minutes. Check doneness with a toothpick – it should come out mostly clean with a few moist crumbs.
Cool
  1. Let the cake cool in the pan for 15 minutes, then remove the springform ring and transfer to a cooling rack until completely cooled.
  2. Dust generously with powdered sugar before serving.
