Ingredients
  

Meats
  • 6 slices 6 slices bacon, chopped Use smoky bacon for best flavor.
  • 12 ounces 12 ounces turkey sausage links, cooked and sliced Can substitute with pork or plant-based versions.
Vegetables
  • 1 medium 1 medium sweet onion, diced
  • 1 red bell pepper 1 red bell pepper, diced
  • 1 yellow bell pepper 1 yellow bell pepper, diced
Grits Base
  • 1 cup 1 cup coarse ground grits Quick-cooking grits can be used in a pinch.
  • 3 cups 3 cups water For cooking the grits.
  • 1 teaspoon 1 teaspoon salt
  • 1 can (14.75 ounces) 1 can (14.75 ounces) creamed corn
  • 4 tablespoons 4 tablespoons butter, melted
  • 4 large 4 large eggs, beaten
  • 1 cup 1 cup sour cream
Cheese Topping
  • 2 cups 2 cups shredded cheddar cheese, divided Use one cup for mixing in and one for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a 9x13 baking dish with butter or cooking spray.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy, about 5 minutes.
  3. Add the diced onion, red bell pepper, and yellow bell pepper to the skillet and sauté until the vegetables soften.
  4. Add the sliced turkey sausage to the mixture and cook for a few more minutes, stirring well.
Cooking the Grits
  1. In a medium saucepan, bring 3 cups of water and 1 teaspoon of salt to a boil.
  2. Slowly whisk in the coarse ground grits, reducing the heat to low and stirring occasionally until creamy, about 5 minutes.
Combining Ingredients
  1. Stir in the melted butter, sour cream, creamed corn, and beaten eggs into the cooked grits.
  2. Gently fold in the bacon and sausage mixture, along with 1 cup of shredded cheese.
Assembly and Baking
  1. Pour the mixture into the prepared baking dish and spread evenly.
  2. Sprinkle the remaining shredded cheese over the top and bake uncovered for 35 to 40 minutes until golden brown.
  3. Let the casserole rest for 5 minutes before slicing and serving.

Notes

For best results, let the casserole rest before slicing. You can also prepare it the night before and bake it fresh in the morning.
