  • 1/2 cup Butter 1 stick
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup White granulated sugar
  • 1 cup Buttermilk See substitution notes.
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon extract
  • 1 can (21-ounce) Lemon pie filling

Method
 

Preparation
  1. Preheat your oven to 350°F and allow it to fully preheat.
  2. In a 9x9-inch baking dish, add your stick of butter and place it in the preheating oven until melted (about 3-4 minutes).
  3. In a medium mixing bowl, whisk together flour, baking powder, and salt for about 30 seconds. Add sugar and whisk briefly until combined.
  4. Pour in buttermilk, vanilla extract, and lemon extract into the dry mixture. Whisk gently until smooth, making sure not to overmix.
  5. Remove the baking dish from the oven, pour the batter directly over the melted butter without stirring.
  6. Spoon lemon pie filling evenly over the batter without stirring.
Baking
  1. Slide the pan into the preheated oven and bake for 45 to 55 minutes, or until the top is golden brown and springs back slightly when touched.
  2. Let it cool for about 10 minutes before serving.

Notes

For best results, use room temperature buttermilk and do not stir the layers. Let the cobbler cool slightly before serving, preferably warm with a scoop of ice cream.
