Ingredients
  

For the Mango Salad
  • 1 large ripe mango, peeled and sliced into thin strips Choose a fully ripe, sweet mango for the best flavor.
  • 1 piece green onion, finely chopped Include both white and green parts.
  • 1/4 cup sweet red bell pepper, chopped About 1/4 of a pepper.
  • 1 cup fresh bean sprouts Rinse and drain well.
  • 2 tablespoons chopped fresh cilantro Or use parsley if preferred.
  • to taste salt and pepper
For the Dressing
  • 2 tablespoons bottled sweet chili sauce
  • 1/2 piece lime, juiced and zested Use fresh lime for the best flavor.
  • 1/2 teaspoon grated fresh ginger Or 1/8 teaspoon ground ginger.
  • 1/2 teaspoon minced garlic About 1 small clove.
  • 1/2 to 1 teaspoon fish sauce Use light soy sauce as a vegetarian option.

Method
 

Dressing Preparation
  1. In a small bowl, whisk together sweet chili sauce, lime juice, lime zest, ginger, garlic, and fish sauce until smooth. Taste and adjust flavors as needed.
Mango Preparation
  1. Peel the mango and slice it into thin strips for best texture and presentation.
Salad Assembly
  1. In a large serving bowl, combine mango, bean sprouts, red bell pepper, cilantro, and green onion.
  2. Pour the dressing over the salad and toss gently to coat all ingredients well.
  3. Serve immediately to prevent wilting.

Notes

For the best mango salad, use ripe mangoes and dress just before serving to maintain crunchiness. Variations can include sliced cucumber or protein additions such as shrimp or chicken.
