Ingredients
  

For the Tofu
  • 1 block Firm or extra-firm tofu (14 to 16 ounces)
For the Marinade
  • 1/2 cup Greek yogurt (or non-dairy yogurt) Can use cashew or coconut yogurt for vegan option.
  • 2 tablespoons Olive oil
  • 2 tablespoons Soy sauce or tamari Substitute tamari for gluten-free option.
  • 2 cloves Garlic, grated
  • 1/2 teaspoon Onion powder (optional)
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano or dried dill Substitute fresh for dried if desired.
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Preparation
  1. Press the tofu for at least 15 minutes by wrapping it in a towel and placing something heavy on top.
  2. Preheat the oven to 400°F (200°C).
  3. In a large mixing bowl, whisk together the Greek yogurt, olive oil, soy sauce, grated garlic, smoked paprika, oregano or dill, salt, pepper, and onion powder until smooth.
  4. Once pressed, pat the tofu dry and tear it into bite-sized pieces.
  5. Gently toss the torn tofu pieces in the marinade until evenly coated. Let it sit for at least 15 minutes or overnight in the fridge for better flavor.
Baking
  1. Line a baking sheet with parchment paper and spread the marinated tofu in a single layer.
  2. Bake for about 30 minutes, checking around 20 minutes for golden edges. Let it rest for a couple of minutes before serving.

Notes

For best results, press tofu longer if possible for even better texture. Store leftovers in an airtight container for up to three days.
