Preparation
- Make the Chocolate Lava Filling by melting chocolate chips and heavy cream in a microwave-safe bowl, stirring until smooth.
- Chill the ganache in the fridge for 10 minutes to thicken as you prepare the waffle batter.
Mixing the Waffle Batter
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients and stir gently. Let the batter rest for 5 minutes.
Preheating the Waffle Iron
- Preheat the waffle iron on medium-high, spraying with non-stick cooking spray.
Assembling the Waffle Bombs
- Pour 1/3 cup of batter into the waffle iron, add 2 marshmallows and 1 tablespoon of ganache, then cover with another 1/3 cup of batter.
- Cook for 4 to 5 minutes without opening the iron.
Finishing Touches
- Carefully open the waffle iron and check for a golden brown color. Let the waffle bomb sit for 60 seconds before cutting.
- Dust with powdered sugar and drizzle with chocolate sauce if desired. Serve warm with whipped cream or ice cream.
