Ingredients
  

For the Meatloaf
  • 1 pound ground beef
  • 1 piece egg
  • 1 tablespoon mustard
  • 1/4 cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/8 cup onion, minced
  • 1/2 cup bread crumbs
For the Sandwich
  • 4 slices pepper jack cheese
  • 4 slices bread
  • to taste butter for grilling

Method
 

Preparation
  1. Preheat your oven to 375°F and prepare a 4×8 baking pan.
  2. In a medium bowl, combine the ground beef, egg, mustard, BBQ sauce, garlic powder, black pepper, and minced onion. Mix until fully combined.
  3. Add the bread crumbs and mix again until the mixture holds together firmly.
  4. Shape the mixture into a neat oval loaf and place it in the prepared baking pan. Spread a little extra BBQ sauce on top.
  5. Cover the pan with foil and bake for about 45 minutes or until the meatloaf is fully cooked.
  6. Once cooked, let the meatloaf rest for about 20 minutes before slicing.
Grilling the Sandwich
  1. Butter one side of each slice of bread.
  2. In a skillet over medium heat, lay one slice of bread, buttered side down, and add one slice of pepper jack cheese.
  3. Add enough meatloaf slices to cover the cheese, top with another slice of cheese, and place the second slice of bread on top, buttered side up.
  4. Cook until the bottom slice of bread is golden brown, then carefully flip and cook the other side until golden and the cheese melts completely.
  5. Remove the sandwich from the skillet, wait a minute before slicing diagonally, and serve hot.

Notes

This sandwich is highly customizable. You can swap in different cheeses or add toppings like jalapeños or bacon for extra flavor. Leftover meatloaf makes this sandwich even easier.
