Ingredients
  

Main Ingredients
  • 8 ounces block feta cheese Use a good quality block, not crumbled.
  • 1 cup pitted olives, drained and halved Kalamata or Castelvetrano olives work well.
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped Oil-packed are preferred for richer flavor.
  • 1/3 cup extra virgin olive oil Quality matters; choose a good extra virgin.
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • pinch red pepper flakes
  • Kosher salt and freshly ground black pepper, to taste
  • Roughly chopped fresh parsley, for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Place the block of feta into a small baking dish.
  3. Combine olives, sun-dried tomatoes, olive oil, minced garlic, dried herbs, red pepper flakes, salt, and pepper in a mixing bowl.
  4. Mix until well combined and every olive and tomato is coated.
  5. Pour the mixture over the feta block, ensuring it's well coated in olive oil.
Baking
  1. Bake for 20 to 25 minutes until the feta is softened and may be lightly golden.
  2. Optionally, broil for 1 to 2 minutes for additional color, watching closely to prevent burning.
Serving
  1. Garnish with fresh parsley and serve immediately with crostini, pita, or veggies.

Notes

Use a block of feta for the best results and serve immediately for optimal texture. Store leftovers in an airtight container for up to 3 days.
