  • 1/2 medium red onion, thinly sliced
  • 2 cloves garlic, minced Watch for burning while cooking
Seasonings
  • 1 tablespoon olive oil For cooking the vegetables
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
Optional Garnish
  • Fresh herbs (e.g., parsley or dill) For garnish or added flavor

Method

Cooking the Filling
  1. Pour the olive oil into a skillet over medium heat. Wait until the oil shimmers.
  2. Add the sliced red onion and cook for about 3 to 4 minutes until soft.
  3. Stir in the minced garlic and cook for another 30 to 60 seconds, being careful not to burn it.
  4. Add the fresh spinach, cooking for about 2 minutes until wilted. Drain any excess moisture.
Assembling the Quesadillas
  1. In a bowl, mix the drained spinach, crumbled feta, shredded mozzarella, oregano, and black pepper until well combined.
  2. Lay a tortilla flat, spread a quarter of the filling over half of it, leaving a small border.
  3. Fold the tortilla over the filling and press down gently.
Cooking the Quesadillas
  1. Heat the skillet over medium heat, adding a little oil if necessary.
  2. Cook each quesadilla for about 2 to 3 minutes per side until golden and crispy.
  3. Remove from the heat and let them rest for a minute before slicing into wedges.

Notes

For the crispiest quesadillas, make sure to drain the spinach well and keep the heat at medium. You can also experiment with add-ins like roasted red peppers or mushrooms.
