Ingredients
  

For the Crepes
  • 6 large Eggs
  • 2 cups Milk
  • 1/2 cup Salted butter, melted
  • 2 teaspoons Vanilla extract
  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon Kosher salt
For the Filling
  • 1 cup Heavy whipping cream
  • 8 ounces Cream cheese, softened Bring to room temperature for a smoother filling
  • 1/2 cup Powdered sugar
  • 4 ounces White chocolate, melted and cooled
  • 1 cup Fresh raspberries, lightly mashed Use fresh raspberries when possible
  • 1 tablespoon Lemon zest
  • 1/4 teaspoon Kosher salt
  • 1 cup Stabilized whipped cream
For Garnish
  • Fresh mint Fresh mint, for garnish

Method
 

Crepe Preparation
  1. Blend the eggs, milk, melted butter, flour, vanilla, sugar, and salt in a high-speed blender until silky smooth.
  2. Heat a 9-inch nonstick frying pan over medium heat. Pour a quarter cup of crepe batter into the pan, swirling to spread evenly.
  3. Cook undisturbed for 45 seconds, until the edges are slightly lifted and golden. Flip and cook for an additional 20-30 seconds. Transfer to a cooling rack.
  4. Repeat until all batter is cooked, stacking the crepes as you go.
Filling Preparation
  1. Whip heavy cream in a stand mixer until stiff peaks form, then set aside.
  2. In the same mixer, beat cream cheese with powdered sugar until smooth. Gradually add melted white chocolate while mixing on low speed until fluffy.
  3. Gently fold in the whipped cream, mashed raspberries, lemon zest, and kosher salt until combined.
Assembly
  1. Layer one crepe on the serving plate, spread a thin layer of raspberry cream filling, then add another crepe. Repeat until all crepes and filling are used.
  2. Finish with a thin layer of cream on top and refrigerate for at least two hours.
Serving
  1. Garnish with stabilized whipped cream, fresh raspberries, and mint before slicing.
  2. Slice with a sharp knife, wiping between cuts for clean edges.

Notes

Let crepes cool completely before stacking. Use fresh raspberries when possible. Chill the assembled cake longer than two hours for better flavor.
