Preparation
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- In a small bowl, mix Oreo crumbs with melted butter until moistened. Spoon 1-2 tablespoons into each liner and press down to form the crust.
- Pre-bake the crusts for 5 minutes, then let them cool slightly.
- In a large bowl, beat cream cheese for 2-3 minutes until smooth.
- Add sugar and vanilla, mixing until fully incorporated. Then add eggs one at a time, mixing on low speed.
- Gently fold in Oreo crumbs and chopped Oreos.
- Spoon filling into each pre-baked crust until nearly full. Bake for 15-17 minutes until the centers jiggle slightly.
- Allow cheesecakes to cool at room temperature for 30-45 minutes, then refrigerate for at least 2 hours before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days. For best results, chill for the full two hours before serving.
