Method
Prepare the Cream Cheese Base
- In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy with no lumps.
- Gradually add the powdered sugar and vanilla extract while continuing to mix until fully combined and glossy.
Whip the Cream
- In a separate bowl, whip the heavy cream on medium-high speed until soft peaks form.
- Be careful not to overwhip, as it can become grainy.
Fold Everything Together
- Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
- Add in the drained crushed pineapple and shredded coconut, folding gently to distribute.
Layering for Presentation
- In clear glasses, layer the crushed graham crackers, followed by the pineapple cheesecake mousse.
- Repeat the layering process, finishing with a dollop of whipped cream and a sprinkle of coconut on top.
Chill and Serve
- Cover the mousse cups and refrigerate for at least 2 hours, or overnight for best results.
Notes
Serve chilled for the best texture. Store leftovers covered in the refrigerator for up to three days. Perfect for make-ahead desserts.
