Method
Make the Crust
- Grind your graham crackers into fine crumbs using a blender or food processor. Combine the crumbs with melted butter and mix until evenly coated.
- Press the mixture firmly into a 9x9 inch pan and refrigerate to chill.
Prep the Strawberries
- Wash and pat the strawberries dry. Remove stems and dice enough strawberries for about a cup of small pieces. Slice the rest lengthwise and pat dry.
Whip the Cream for the Filling
- Chill a mixing bowl in the freezer for 5 to 10 minutes. Beat heavy cream at medium-high speed until soft peaks form. Gradually add powdered sugar until stiff peaks form.
Make the Cheesecake Base
- Beat cream cheese, granulated sugar, lemon juice, and vanilla extract until smooth. Fold in the whipped cream gently.
Split and Flavor the Filling
- Divide the cheesecake mixture into two portions. Mix strawberry Jello powder and diced strawberries into one portion.
Layer the Dessert
- Layer sliced strawberries over the crust, top with plain cheesecake filling, followed by the strawberry-flavored mixture, smoothing each layer.
Make the Whipped Topping
- Beat heavy cream until soft peaks form, add powdered sugar and beat until stiff peaks form. Spread or pipe this over the dessert.
Chill Until Set
- Cover with plastic wrap and refrigerate for 4 to 6 hours, or until fully set.
Notes
This dessert can be garnished with extra strawberries or a drizzle of strawberry sauce. Store leftovers tightly covered in the fridge for up to 3 days. Freezing is not recommended.
