Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 pound minced beef (ground beef)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Vegetables
  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and diced
  • 1 cup frozen peas
Broth and Seasonings
  • 2 tablespoons tomato paste
  • 2 cups beef broth, low-sodium preferred
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and black pepper
Garnish
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Preparation
  1. Warm the olive oil in a large pot over medium heat until it starts to shimmer slightly.
  2. Add the chopped onion and minced garlic, stirring for 2 to 3 minutes until the onion turns soft.
Browning the Beef
  1. Add the minced beef into the pot, breaking it apart with a wooden spoon as it cooks.
  2. Cook for 5 to 7 minutes until no pink remains and drain off any excess fat.
Adding Vegetables
  1. Stir in the diced carrots and potatoes and let them cook together with the beef for about 5 minutes.
Adding Broth and Seasonings
  1. Stir in the tomato paste, then add the beef broth and Worcestershire sauce, followed by dried thyme, salt, and pepper.
Simmering
  1. Bring to a gentle boil, then reduce the heat to low and cover the pot.
  2. Let it simmer undisturbed for 25 to 30 minutes.
Final Touch
  1. In the last 5 minutes, stir in the frozen peas, adjusting the seasoning as necessary before serving.
Serving
  1. Ladle into bowls, garnish with chopped parsley, and serve warm.

Notes

This hotpot is adaptable; swap the minced beef for turkey or even lentils for a vegetarian option. You can add extra heat with jalapeƱos or red pepper flakes if desired.
