Ingredients
  

For the Crust
  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
For the Cream Cheese Layer
  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup powdered sugar
  • 2 cups Cool Whip (whipped topping)
For the Orange Pudding Layer
  • 1 package (3 oz) Jell-O orange gelatin powder
  • 1 cup boiling water
  • 2 packages (3.4 oz each) Jell-O vanilla instant pudding mix
  • cups cold milk
Now For the Top Layer
  • 2 cups Cool Whip (remaining)
  • 1 can (11 oz) mandarin orange segments, drained

Method
 

Building the Crust
  1. Combine the graham cracker crumbs and melted butter in a medium mixing bowl. Stir until every crumb is evenly coated.
  2. Press the crumb mixture into a 9×13-inch dish and freeze for 10-15 minutes to set.
Dissolving the Orange Jell-O
  1. In a small bowl, pour the orange gelatin powder and add boiling water. Whisk until fully dissolved, then cool to room temperature.
Preparing the Vanilla Pudding
  1. In a large bowl, whisk the vanilla pudding mix with cold milk until thickened.
  2. Mix in the cooled orange Jell-O mixture and let sit for 5 minutes.
Making the Cream Cheese Layer
  1. Beat the softened cream cheese in a bowl until smooth, then add powdered sugar and mix until creamy.
  2. Fold in 2 cups of Cool Whip gently.
Layering the Dessert
  1. Spread the cream cheese mixture over the set crust.
  2. Pour the orange pudding mixture over the cream cheese layer carefully.
  3. Spread the remaining Cool Whip on top and add mandarin orange segments decoratively.
Chill and Serve
  1. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  2. Slice into squares and serve.

Notes

For best results, chill overnight to allow flavors to meld. Can substitute different gelatin flavors for variations.
