- Warm the olive oil in a medium saucepan over medium heat.
- Add the finely chopped onion and sauté for about 3 to 4 minutes until soft and translucent.
- Stir in the minced garlic and cook for another 1 to 2 minutes, being careful not to burn it.
- Add the orzo pasta and toast for about 2 minutes, stirring frequently.
- Pour in the vegetable broth, and add the dried thyme, dried oregano, salt, and black pepper. Stir to combine.
- Bring to a boil, then cover and reduce the heat to low, letting it simmer for 10 to 12 minutes.
- Once cooked, fluff the orzo with a fork, and stir in the fresh parsley and grated Parmesan cheese if using.
Notes
For best results, let broth come to room temperature before adding. Fluff with a fork to maintain texture.
