  • 2 tablespoons olive oil Used for sautéing.
  • 1 small onion, finely chopped Provides flavor and sweetness.
  • 3 cloves garlic, minced Adds aroma and flavor.
  • 1 cup orzo pasta The main grain in this pilaf.
  • 2 cups vegetable broth Use room temperature for best results.
  • 1 teaspoon dried thyme Herb flavor.
  • 1 teaspoon dried oregano Herb flavor.
  • 1/2 teaspoon salt Enhances all the flavors.
  • 1/4 teaspoon black pepper Adds a bit of heat.
  • 1/4 cup fresh parsley, chopped For garnish.
  • 1/4 cup grated Parmesan cheese, optional Can be added for richness.

Method
 

Preparation
  1. Warm the olive oil in a medium saucepan over medium heat.
  2. Add the finely chopped onion and sauté for about 3 to 4 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for another 1 to 2 minutes, being careful not to burn it.
  4. Add the orzo pasta and toast for about 2 minutes, stirring frequently.
  5. Pour in the vegetable broth, and add the dried thyme, dried oregano, salt, and black pepper. Stir to combine.
  6. Bring to a boil, then cover and reduce the heat to low, letting it simmer for 10 to 12 minutes.
  7. Once cooked, fluff the orzo with a fork, and stir in the fresh parsley and grated Parmesan cheese if using.

Notes

For best results, let broth come to room temperature before adding. Fluff with a fork to maintain texture.
