  • 2 pounds Boneless, skinless chicken thighs About 8 thighs
  • 2 tablespoons Olive oil
  • 1 tablespoon Chicken seasoning
  • 1 cup BBQ sauce Plus extra for serving

Method
 

Preparation
  1. Pat the chicken thighs dry thoroughly with paper towels.
  2. In a bowl or zip-top bag, combine the chicken thighs with olive oil and chicken seasoning. Toss until evenly coated.
  3. If time allows, marinate in the fridge for at least an hour or overnight.
Cooking
  1. Preheat your oven to 400°F and line a baking sheet with foil.
  2. Place a wire rack on top of the lined baking sheet.
  3. Arrange the seasoned chicken thighs on the wire rack in a single layer with space between each piece.
  4. Bake for 20 to 25 minutes until the internal temperature reaches 165°F.
  5. Brush each thigh with BBQ sauce, covering the entire surface.
  6. Switch the oven to broil and return the tray, watching closely for 1 to 3 minutes until the glaze caramelizes.
Serving
  1. Let the chicken rest for about 5 minutes before serving.
  2. Serve warm with extra BBQ sauce and optional fresh parsley garnish.

Notes

Pat the chicken completely dry for better seasoning absorption. Use a meat thermometer to confirm internal temperature. Broil carefully as glaze can burn quickly. Marinate for improved flavor.
