Preparation
- Preheat the oven to 425°F (220°C). Ensure it is fully preheated before adding the chicken.
- Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness.
- Pat the chicken dry with a paper towel. Drizzle olive oil on both sides and rub it in.
- Season the chicken with kosher salt and black pepper.
- In a bowl, mix brown sugar, chili powder, paprika, cumin, garlic powder, and cayenne pepper. Coat the chicken thoroughly with the spice mixture.
Baking
- Line a baking sheet with foil or parchment paper and arrange the chicken breasts in a single layer.
- Bake in the preheated oven for 20 to 25 minutes, checking the internal temperature with a meat thermometer around the 18-minute mark.
Finishing Touches
- Once the chicken reaches an internal temperature of 165°F (74°C), pull it from the oven. Let it rest for 5 to 10 minutes before slicing.
- Slice against the grain for the most tender bite and garnish with chopped parsley if desired.
