Ingredients
  

For the Ribs
  • 3 pounds baby back ribs, about 2 slabs
  • 2 pieces yellow onions, sliced
  • 4 cloves garlic, sliced
For the Spice Rub
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon lemon pepper seasoning
  • ½ teaspoon salt, or to taste
For the BBQ Sauce
  • ½ cup barbecue sauce
  • ½ cup chili sauce, or additional BBQ sauce
  • ¼ cup ketchup

Method
 

Preparation
  1. Preheat your oven to 275°F and line a large rimmed baking sheet with aluminum foil.
  2. Mix all the spice rub ingredients together in a small bowl and set aside.
Ribs Preparation
  1. Remove the white membrane from the back of the ribs if necessary.
  2. Pat the ribs dry with paper towels, cut the slabs into four to six rib portions.
Seasoning
  1. Rub the seasoning mixture evenly over both sides of the ribs.
  2. Place the seasoned ribs meaty side down on the baking sheet, and scatter the sliced onions and garlic on top.
Baking
  1. Cover the ribs tightly with foil and bake for 2 hours.
  2. Check for tenderness after 2 hours and continue baking, covered, for an additional 20-30 minutes if needed.
Saucing and Finishing
  1. Mix the BBQ sauce, chili sauce, and ketchup together.
  2. Remove the ribs from the oven, brush with olive oil, and coat with the BBQ mixture.
  3. Broil or grill for 5 to 10 minutes until the sauce is sticky and caramelized.

Notes

For best results, remove the rib membrane, seal the foil tightly, and watch the ribs closely while broiling. Store leftovers in an airtight container for up to four days.
