Oven Fried Feta Rolls with Chili Honey

Ingredients
  

For the Filling
  • 8 ounces Feta cheese, crumbled Use block feta packed in brine for best flavor and texture.
  • 1/2 cup Ricotta cheese
  • 1 tablespoon Fresh dill, chopped
  • 1 clove Garlic, grated
For the Rolls
  • 8 sheets Phyllo dough, thawed Keep sheets covered with a damp towel to prevent drying.
  • 1/4 cup Olive oil, for brushing Brush between layers for crispiness.
  • 1 tablespoon Sesame seeds, for topping
For the Chili Honey
  • 3 tablespoons Honey
  • 1 tablespoon Chili oil
  • 1 teaspoon Crushed red pepper flakes
Garnish
  • Fresh chives For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta, ricotta, chopped dill, and grated garlic. Mix until it forms a thick paste.
  3. Lay one sheet of phyllo dough flat, brush lightly with olive oil, fold in half lengthwise, and brush again with oil.
Filling and Rolling
  1. Place a tablespoon of the feta mixture near one end of the phyllo strip and fold the corner over to create a triangle.
  2. Continue folding the strip like folding a flag to seal the filling inside.
  3. Repeat with the remaining ingredients until you've made about 12 rolls.
Baking
  1. Place the rolls seam-side down on the baking sheet, brush with olive oil, and sprinkle sesame seeds on top.
  2. Bake for 18-20 minutes, keeping an eye on them to avoid burning.
Making Chili Honey
  1. While the rolls bake, whisk together honey, chili oil, and red pepper flakes in a small bowl until well combined.
Serving
  1. Let the rolls cool for 2 minutes before drizzling them with chili honey and garnishing with chopped chives.
  2. Serve immediately for best texture.

Notes

Store leftovers in an airtight container in the fridge for up to 2-3 days. Reheat in a 350°F oven to maintain crispiness.
