Ingredients
  

Main Ingredients
  • 4 medium Yukon Gold potatoes, diced into half-inch cubes About 1.5 pounds
  • 8 ounces Mexican chorizo, casing removed Use raw, loose Mexican chorizo
  • 0.5 piece White onion, finely chopped Half an onion
  • 2 cloves Garlic, minced
  • 1 piece Jalapeño, seeded and diced Skip if you're spice-shy
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • to taste Salt and black pepper
  • 2 tablespoons Fresh cilantro, chopped, for garnish
  • 1 piece Lime, cut into wedges
  • optional Queso fresco, for crumbling on top

Method
 

Preparation
  1. Wash the Yukon Gold potatoes and dice them into even half-inch cubes. Keep the skin on if desired.
  2. Pat the diced potatoes dry with a towel to avoid steaming during cooking.
Cooking the Potatoes
  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  2. Add the diced potatoes in a single layer and cook without stirring for two to three minutes at a time for about twelve to fifteen minutes until they brown.
  3. Once golden-brown, scoop the potatoes out and set them aside.
Cooking the Chorizo
  1. In the same skillet, add the chorizo and break it apart while cooking for about six to eight minutes until browned and crisp.
Building the Flavor Base
  1. Add chopped onion into the rendered chorizo fat and cook for three minutes until softened.
  2. Add garlic and jalapeño, cooking for one more minute.
Bringing it All Together
  1. Return the crispy potatoes to the skillet with the chorizo mixture, add smoked paprika and cumin, and season with salt and pepper.
  2. Stir gently for two to three minutes to combine flavors.
Finishing and Serving
  1. Remove from heat and scatter fresh cilantro over the top.
  2. Serve hot with lime wedges to squeeze over the dish.

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months. Reheat in a skillet for best results.
