Ingredients
  

Fruits
  • 2 small to medium Ripe peaches, diced
  • 1 medium Fresh mango, peeled and diced
Vegetables
  • 1 medium Jalapeño pepper, de-seeded and finely diced
  • 1/2 cup Frozen corn, no need to thaw
Sauces and Seasonings
  • 2 tablespoons Sweet red chili sauce
  • 1 lime Lime juice, juice of 1 lime (or 2 if not juicy)
  • 1/4 cup Fresh cilantro leaves, torn
  • a pinch Salt, to taste
  • a pinch Cayenne pepper, optional
For Serving
  • Baked tortilla chips For serving

Method
 

Preparation
  1. Wash peaches thoroughly under cool water. Peel if preferred.
  2. Cut peaches into small, even cubes and set aside in a large mixing bowl.
  3. Do the same with the mango, being careful around the seed.
Mixing Ingredients
  1. Slice and de-seed the jalapeño, then finely dice it and add to the bowl with the frozen corn.
  2. Pour the sweet red chili sauce over the fruit mixture, followed by lime juice.
  3. Add torn cilantro leaves and gently stir everything together, being careful to keep the fruit intact.
Final Touches
  1. Squeeze the mango seed over the bowl to release remaining juice.
  2. Taste the salsa and adjust the lime juice, salt, and cayenne to your preference.
  3. Serve immediately with baked tortilla chips or refrigerate for up to 24 hours.

Notes

Choose ripe fruit for the best flavor. Let it chill for at least 30 minutes if possible for enhanced taste.
