Preparation
- Preheat the oven to 350°F and line baking sheets with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine softened butter, granulated sugar, brown sugar, and creamy peanut butter. Beat until light and fluffy.
- Add the eggs and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour and baking soda.
- Gradually add the flour mixture to the wet ingredients, mixing until a thick dough forms.
- Gently fold in peanut butter chips and chopped Butterfinger pieces.
- Scoop 1-2 tablespoons of dough, roll into balls, and place on the baking sheet spaced apart.
- Bake for 9-11 minutes until edges are set but centers are still slightly soft.
- Allow cookies to rest on the baking sheet for a few minutes before transferring to a wire rack.
- Optionally, press additional Butterfinger or peanut butter chips on top while warm.
Notes
Do not overbake; cookies are best when centers look soft. Chilling the dough can help with thickness.
