Preparation
- Preheat your oven to 350°F and spray a 13×9-inch pan generously with baking spray.
Making the Brownie Batter
- In a large microwave-safe bowl, combine the butter and semisweet chocolate chips. Microwave for 30 seconds, stir well, then continue microwaving in 15-second intervals, stirring until the mixture is smooth.
- Stir the cocoa powder into the melted butter and chocolate mixture until smooth.
- Add granulated sugar and brown sugar; mix until fully combined.
- Add eggs and egg yolk one at a time, stirring thoroughly after each addition.
- Stir in vanilla extract and salt until evenly mixed.
- Add flour and mix just until combined. Do not overmix.
- Spread half of the brownie batter evenly into the prepared pan.
Making the Peanut Butter Fudge Layer
- In a medium saucepan over medium-low heat, combine white chocolate chips, sweetened condensed milk, and peanut butter. Stir frequently until smooth.
- Remove from heat and stir in vanilla extract and salt. Pour the fudge mixture over the brownie batter.
- Let the fudge layer sit for about 5 minutes to firm up slightly.
Finishing the Brownies
- Spread the remaining brownie batter over the fudge layer.
- Bake for 40 to 50 minutes, checking for doneness starting at 40 minutes.
- Let the brownies cool completely before slicing.
