Ingredients
  

For the Bars
  • 1 cup Butter, room temperature Make sure it is softened for proper creaming.
  • 1 cup Light brown sugar
  • 1/2 cup Granulated sugar
  • 1 cup Creamy peanut butter
  • 2 large Eggs Add one at a time.
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All-purpose flour Can substitute with gluten-free flour.
  • 2 cups Old fashioned oats Gives the bars their signature chew.
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
For the Topping
  • 1 cup Milk chocolate chips Can use dark chocolate chips as a variation.
  • 1/2 cup Creamy peanut butter

Method
 

Preparation
  1. Preheat the oven to 350°F. Grease a 13x9 inch baking pan or line it with parchment paper, leaving overhang on the sides.
  2. Beat together the butter, brown sugar, granulated sugar, and peanut butter until pale and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, oats, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Transfer the mixture to the prepared baking pan and press it into an even layer.
Baking
  1. Bake in the preheated oven for 20-25 minutes until the edges are golden and the center is slightly soft.
  2. Let the pan cool for 10-15 minutes before making the topping.
Topping
  1. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Heat in 30-second bursts, stirring until smooth.
  2. Pour the melted mixture over the cooled bars and spread evenly. Let it set at room temperature for 30-60 minutes or refrigerate for quicker setting.
Serving
  1. Once the topping has set, lift out the bars using the parchment overhang and cut into squares or rectangles.

Notes

These bars are best at room temperature. Store in an airtight container for up to 3 days at room temperature, a week in the refrigerator, or up to 2 months in the freezer. Thaw frozen bars at room temperature.
