- Chop the pecans finely in a food processor to a coarse, sandy texture. Toast the pecans on a skillet for 3-4 minutes for added flavor if desired.
- Crush the graham crackers in a zip-lock bag using a rolling pin until fine.
- In a large mixing bowl, combine chopped pecans, crushed graham crackers, brown sugar, and salt. Mix until evenly distributed.
- Pour in maple syrup and vanilla extract, then mix everything together until it forms a sticky dough.
- Roll the mixture into 24 balls using a tablespoon measure or cookie scoop.
- Roll each ball in powdered sugar until fully coated.
- Chill the balls in the refrigerator for at least 1 hour before serving.
Notes
These balls taste even better after being refrigerated overnight. They can be stored in an airtight container for up to one week. For variations, try adding a splash of bourbon or a drizzle of melted chocolate.
