Ingredients
  

Eggs and Filling
  • 6 large large eggs Use eggs that are close to a week old for easier peeling.
  • 1/4 cup mayonnaise Can be substituted with Greek yogurt or mashed avocado.
  • 1/2 cup finely shredded sharp cheddar cheese Try pepper jack or gouda as alternatives.
  • 2 tablespoons chopped pimentos Use extra for garnish.
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika Use extra for garnish.
  • 2 tablespoons sliced green onions Optional for garnish.

Method
 

Preparation
  1. Place your eggs gently into a medium pot, covering them with cold water.
  2. Set the pot over medium-high heat and bring to a full boil, then remove from heat and cover for 10-12 minutes.
  3. Prepare an ice bath while waiting for the eggs to finish cooking.
  4. Transfer the eggs to the ice bath to stop the cooking process for at least 5-10 minutes.
  5. Peel the eggs under running water and pat dry.
Filling
  1. Slice each egg in half and scoop out the yolks into a medium mixing bowl.
  2. Mash the yolks and mix in mayonnaise, cheddar cheese, chopped pimentos, mustard, Worcestershire sauce, garlic powder, salt, and pepper.
  3. Adjust the seasoning as needed.
Assembly
  1. Fill each egg white half generously with the yolk mixture.
  2. Garnish with smoked paprika and any extra pimentos or green onions.

Notes

Prepare the filling a day ahead for convenience. Keep the platter chilled if serving outdoors.
