  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 piece red bell pepper, diced
  • 1 piece green bell pepper, diced
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 piece jalapeño, sliced (optional) skip if you want mild
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh cilantro, chopped (for serving)

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and prepare four large sheets of aluminum foil about 12x12 inches each.
  2. Place a small handful of pineapple chunks in the center of each foil sheet.
  3. Scatter diced red and green bell peppers on top of the pineapple.
  4. Add one chicken breast on top of the pineapple and peppers, then season with salt and pepper.
  5. In a bowl, combine BBQ sauce, olive oil, smoked paprika, garlic, lemon juice, and oregano to make the sauce.
  6. Spoon the sauce mixture generously over each chicken breast.
  7. Seal the foil packets tightly to keep the steam from escaping.
Cooking
  1. Bake the sealed packets in the preheated oven for 35 to 40 minutes.
  2. After 35 minutes, carefully open one packet to check for doneness. Chicken should be cooked through and juices clear.
  3. For a golden finish, open the top of each packet, drizzle with reserved BBQ sauce, and broil for 1 to 2 minutes.
  4. Let the packets rest for 2 to 3 minutes before serving, then sprinkle with fresh cilantro.

Notes

Use heavy-duty foil to prevent tearing. Make sure to drain canned pineapple well. Don't overfill packets to allow steam circulation.
