Preparation
- Preheat your oven to 350°F (180°C) and prepare four large sheets of aluminum foil about 12x12 inches each.
- Place a small handful of pineapple chunks in the center of each foil sheet.
- Scatter diced red and green bell peppers on top of the pineapple.
- Add one chicken breast on top of the pineapple and peppers, then season with salt and pepper.
- In a bowl, combine BBQ sauce, olive oil, smoked paprika, garlic, lemon juice, and oregano to make the sauce.
- Spoon the sauce mixture generously over each chicken breast.
- Seal the foil packets tightly to keep the steam from escaping.
Cooking
- Bake the sealed packets in the preheated oven for 35 to 40 minutes.
- After 35 minutes, carefully open one packet to check for doneness. Chicken should be cooked through and juices clear.
- For a golden finish, open the top of each packet, drizzle with reserved BBQ sauce, and broil for 1 to 2 minutes.
- Let the packets rest for 2 to 3 minutes before serving, then sprinkle with fresh cilantro.
Notes
Use heavy-duty foil to prevent tearing. Make sure to drain canned pineapple well. Don't overfill packets to allow steam circulation.
