Preparation
- Preheat your oven to 350°F and grease an 8x4-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add half of the dry mixture into the wet mixture along with the ¼ cup of reserved pineapple syrup, mixing gently.
- Stir in the remaining dry ingredients and 2 tablespoons of milk until just combined.
- Fold in the drained crushed pineapple gently.
- Pour the batter into the prepared loaf pan, smoothing the top.
Baking
- Bake in the preheated oven for 45 to 55 minutes, or until a toothpick comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Glazing
- Whisk together the powdered sugar, vanilla extract, and pineapple syrup until smooth. Adjust syrup for desired consistency.
- Once the loaf has cooled completely, spread the glaze on top and let it set before slicing.
Notes
Store wrapped at room temperature for up to 2 days, or refrigerate for up to 5 days. This bread can be frozen for up to 3 months.
