  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1.5 cups fresh pineapple, diced
For garnish
  • 2 green onions sliced

Preparation
  1. Whisk together the glaze by combining brown sugar, soy sauce, rice vinegar, and cornstarch in a medium bowl until smooth and glossy.
  2. Pat the chicken pieces dry, season with salt and pepper on all sides.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat and sear the chicken pieces in batches until golden brown and cooked through to 165°F, about 6-7 minutes total.
  2. Pour the prepared glaze over the cooked chicken and stir continuously until well coated and the sauce thickens.
  3. Add diced pineapple to the skillet, simmer gently for 3-5 minutes until the glaze is thick and clinging.
Serving

Notes
