Ingredients
  

Main Ingredients
  • 4 cups cold lemonade Use store-bought or homemade.
  • 1 cup pineapple juice 100% pure with no added sugar.
  • 1 cup coconut milk or coconut cream Full-fat preferred for creaminess.
  • 1/4 cup simple syrup or honey Optional, adjust to taste.
  • 2 cups ice For serving.
Optional Garnishes
  • to taste pineapple slices For garnish.
  • to taste lemon slices or wedges For garnish.
  • to taste maraschino cherries For garnish.
  • to taste toasted coconut flakes For garnish.

Method
 

Preparation
  1. Grab a large pitcher and rinse it with cold water. If possible, chill it in the fridge for 10 minutes.
  2. Pour in 4 cups of cold lemonade. You can use store-bought lemonade or make your own.
  3. Add 1 cup of pineapple juice into the pitcher and stir gently.
  4. Slowly pour in 1 cup of coconut milk or coconut cream while gently stirring.
  5. Taste the mixture and add 1/4 cup of simple syrup or honey incrementally until you reach the desired sweetness.
  6. Fill 4 tall glasses generously with ice.
  7. Pour the prepared Pineapple Coconut Lemonade over the ice in each glass.
  8. Garnish each glass with a slice of fresh pineapple, a lemon wedge, and a maraschino cherry, then sprinkle toasted coconut flakes on top.
  9. Serve immediately while the drink is cold.

Notes

To make a frozen version, blend all ingredients with ice rather than pouring it over. For a sparkling version, replace half the lemonade with sparkling water. Add coconut rum for an adult twist, or include fresh mint for a refreshing touch.
