Filling
  • 20 ounces Pineapple chunks, drained Use canned or fresh
  • 8 ounces Cream cheese, cut into cubes Use room temperature for best results

Preparation
  1. Preheat the oven to 350°F and let it fully heat before starting.
  2. Melt the butter completely and pour it into a 9x13-inch baking dish to coat the bottom.
  3. In a mixing bowl, whisk together the egg, milk, flour, sugar, baking powder, and salt until smooth.
Layering and Baking
  1. Pour the batter over the melted butter without stirring.
  2. Scatter the drained pineapple chunks evenly across the batter.
  3. Add the cubed cream cheese on top of the pineapple chunks.
  4. Bake in the preheated oven for 45 minutes until golden and bubbly.
  5. Let the cobbler rest for 5 to 10 minutes before serving.
