Ingredients
  

Main ingredients
  • 2 cups pineapple chunks, fresh or frozen Frozen pineapple gives you a thicker, colder smoothie.
  • 1 cup vanilla ice cream Greek yogurt can be used as a swap.
  • ½ cup coconut milk Optional ingredient.
  • ½ cup ice cubes Skip this if using frozen pineapple.

Method
 

Preparation
  1. If using a whole pineapple, slice off the top and bottom, stand it upright, and cut away the skin in strips. Slice the flesh into rounds, remove the tough core, and chop into bite-sized chunks.
  2. Rinse your pineapple chunks if freshly cut. Measure out two cups of chunks and set them next to your blender.
Blending
  1. Drop the pineapple chunks into the blender, followed by the vanilla ice cream or Greek yogurt, coconut milk if using, and ice cubes if the pineapple wasn't frozen.
  2. Blend on high for about 30 seconds, scrape down the sides, and blend again for another 15 seconds until completely smooth.
Final Adjustments
  1. Taste and adjust the sweetness if needed by blending in honey or maple syrup. If too thick, add a splash of coconut milk or water, and if too thin, add more frozen pineapple or ice cubes.
Serving
  1. Pour the smoothie into two chilled glasses and serve immediately. Garnish with a pineapple wedge or mint if desired.

Notes

For a better smoothie, use ripe pineapple, freeze extra chunks ahead of time, taste before serving, and serve immediately for the best texture.
