Ingredients
  

Main Ingredients
  • 4 cups Fresh pineapple chunks Use ripe pineapple for best flavor.
  • 1/2 cup Granulated sugar Adjust to taste based on sweetness of pineapple.
  • 1 tablespoon Lime juice Brightens the flavor.
  • 1/4 cup Water

Method
 

Preparation
  1. Pick a ripe pineapple that smells sweet at the base and gives slightly when pressed.
  2. Peel and chop the pineapple into rough one-inch chunks.
Blending
  1. Add pineapple chunks, sugar, lime juice, and water into a blender in that order.
  2. Blend on high until smooth, about 45 seconds to a minute. Scrape down the sides as needed.
  3. Taste the mixture and adjust sweetness with more sugar if necessary.
Freezing
  1. Pour the blended mixture into a shallow, freezer-safe dish and spread evenly.
  2. Freeze for about 1 to 2 hours until firm. Check around the one-hour mark.
  3. Once firm, scrape the surface with a fork to create a light, fluffy texture.
Serving
  1. Scoop the sorbet into bowls immediately after fluffing.
  2. Top with fresh mint or a drizzle of coconut cream if desired.

Notes

Store leftovers in an airtight container for up to a week. Let it sit out for a few minutes before scooping if frozen solid. Scraping with a fork prevents the sorbet from turning into a solid block.
