Preparation
- Pick a ripe pineapple that smells sweet at the base and gives slightly when pressed.
- Peel and chop the pineapple into rough one-inch chunks.
Blending
- Add pineapple chunks, sugar, lime juice, and water into a blender in that order.
- Blend on high until smooth, about 45 seconds to a minute. Scrape down the sides as needed.
- Taste the mixture and adjust sweetness with more sugar if necessary.
Freezing
- Pour the blended mixture into a shallow, freezer-safe dish and spread evenly.
- Freeze for about 1 to 2 hours until firm. Check around the one-hour mark.
- Once firm, scrape the surface with a fork to create a light, fluffy texture.
Serving
- Scoop the sorbet into bowls immediately after fluffing.
- Top with fresh mint or a drizzle of coconut cream if desired.
Notes
Store leftovers in an airtight container for up to a week. Let it sit out for a few minutes before scooping if frozen solid. Scraping with a fork prevents the sorbet from turning into a solid block.
