Preparation
- Wash the strawberries thoroughly under cool running water. Remove the green tops and set aside.
- Slice the top and bottom off the pineapple to stand it flat, then cut away the tough outer skin and fibrous core. Chop into bite-sized chunks.
Blending
- Add hulled strawberries and pineapple chunks into a blender. Pulse to break down the fruit, then blend until smooth.
- Pour in fresh lemon juice and blend until everything is a smooth puree.
Mixing
- Pour the fruit puree into a large pitcher. Add sugar and 2 cups of cold water, stirring until sugar is dissolved.
- Add the remaining 2 cups of water, taste, and adjust sweetness with more sugar or lemon juice as desired.
Chilling and Serving
- Cover the pitcher and refrigerate for at least one hour to let flavors meld.
- Serve over ice, garnished with lemon slices or mint sprigs.
Notes
Use ripe fruit for the best flavor. You can make this ahead of time, and it can be stored in the fridge for up to three days. Consider scaling the recipe for larger gatherings.
