Method
Build the Crust
- Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until the mixture looks like damp sand and holds together when pressed.
- Divide the mixture evenly among your molds or serving dishes, then press it firmly into the bottom of each one.
- Place the crusts in the refrigerator for about 15 minutes to firm up. Optionally, bake the crusts at 350°F for 5 to 7 minutes before chilling.
Whip Up the Cheesecake Filling
- Beat the softened cream cheese until smooth and lump-free.
- Add the granulated sugar, vanilla extract, and mint extract, mixing until fully combined and slightly fluffy.
- If desired, add a few drops of gel food coloring and mix until the desired color is achieved.
Assemble the Towers
- Spoon the cheesecake filling on top of each crust, then smooth the tops with a spatula.
- Return the assembled towers to the refrigerator for at least two hours to allow the filling to set.
Add the Pomegranate Mint Topping
- Once the cheesecake filling has set, top each tower with fresh pomegranate arils and a few fresh mint leaves.
- Optionally, drizzle honey over the top before serving.
Notes
Make the towers a day in advance to improve flavor. Serve chilled for the best texture.
