Ingredients
  

For the pancake batter
  • 4 medium Potatoes, peeled and grated
  • 2 large Eggs
  • 1/4 cup Flour or cornstarch Choose based on dietary needs.
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Salt, divided Use half for batter, half for seasoning filling.
  • 1/2 teaspoon Black pepper, divided Use half for batter, half for seasoning filling.
For the beef filling
  • 1/2 pound Ground beef
  • 1/2 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • 1 cup Shredded mozzarella or cheddar cheese Use your favorite cheese.
For frying and garnish
  • 1/2 cup Vegetable oil, for frying
  • 2 tablespoons Fresh parsley, chopped Optional for garnish.

Method
 

Preparation
  1. Peel and grate the potatoes, then drain them using a clean kitchen towel to remove excess moisture.
  2. In a large bowl, combine the drained potatoes, eggs, flour or cornstarch, garlic powder, and half of the salt and pepper. Mix until you have a thick, cohesive batter.
Cooking the filling
  1. In a skillet, brown the ground beef over medium heat for about 5 to 7 minutes, breaking it apart as it cooks. Add the chopped onion and minced garlic and cook until the onion is soft.
  2. Season the beef mixture with paprika, cumin, and the remaining salt and pepper. Cook for an additional minute, then remove from heat and let it cool slightly.
Assembling the pancakes
  1. Take a portion of the potato mixture, flatten it in your palm, and add a spoonful of the beef filling and cheese in the center. Top with another layer of potato mixture and seal the edges.
Frying
  1. Heat the vegetable oil in a skillet over medium heat. Fry the pancakes for about 3 to 4 minutes on each side until golden brown. Avoid overcrowding the pan.
  2. Once done, place the pancakes on a plate lined with paper towels to drain excess oil.
Serving
  1. Serve warm, garnished with fresh parsley if desired.

Notes

Make sure to squeeze out as much moisture from the potatoes as possible for crispy pancakes. You can refrigerate assembled pancakes for up to 24 hours before frying.
