Preparation
- Preheat the oven to 350°F and prep a 9x5-inch loaf pan with floured baking spray or butter and flour.
- In a large mixing bowl, whisk together the egg, pumpkin puree, light brown sugar, granulated sugar, canola oil, sour cream, and molasses until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Gently fold in the mini chocolate chips, reserving a small handful to sprinkle on top if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 50 to 55 minutes until golden and set. Check doneness with a toothpick.
- Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
