Preparation
- Preheat your oven to 350°F and line a muffin pan with paper liners.
- In a large mixing bowl, whisk together the pumpkin puree, sugar, eggs, vanilla extract, and evaporated milk until smooth.
- In another bowl, whisk together the flour, pumpkin pie spice, kosher salt, baking soda, and baking powder.
- Combine the dry ingredients with the wet ingredients in two to three additions, folding gently until no flour streaks remain.
- Fill each muffin liner about two-thirds full using a cookie scoop or large spoon.
Baking
- Bake the cupcakes for 20 to 22 minutes, checking for doneness with a toothpick.
- Let the cupcakes cool in the muffin pan for about 10 minutes, then transfer to a wire rack to cool completely.
Chilling and Serving
- Once cooled, chill the cupcakes in the fridge for about 1 hour before serving.
- Top each cupcake with whipped cream just before serving.
Notes
