Ingredients
  

For the Chicken Filling
  • 3 cups Rotisserie chicken, shredded
  • 1 Jalapeño pepper, diced
  • 2 tablespoons Taco seasoning
  • 1/2 cup Sour cream, plus more for garnish
  • 1 cup Sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 ounces Green chilies, canned and drained
For the Queso Sauce
  • 16 ounces Queso Blanco Velveeta, cubed
  • 10 ounces Diced tomatoes with green chilies, canned
For Assembly
  • 8 Flour tortillas
Optional Garnishes
  • Fresh tomatoes, diced
  • Extra jalapeño, diced
  • Fresh cilantro, chopped
  • Additional sour cream

Method
 

Preparation
  1. Preheat the oven to 400°F and coat a 9x13-inch baking dish with nonstick cooking spray.
Build the Chicken Filling
  1. In a mixing bowl, combine shredded rotisserie chicken, diced jalapeño, and taco seasoning. Mix thoroughly.
  2. Add sour cream, sharp cheddar, Monterey Jack cheeses, and drained green chilies. Mix again until well combined.
Melt the Queso Sauce
  1. In a medium saucepan over medium heat, combine cubed Velveeta and undrained diced tomatoes. Stir consistently until smooth and creamy.
Assemble the Enchiladas
  1. Lay a flour tortilla flat and spoon half a cup of chicken filling into the center. Roll tightly and place seam-side down in the prepared baking dish.
  2. Repeat with remaining tortillas, arranging them snugly in the dish.
Add Queso Sauce
  1. Pour the warm queso sauce over the rolled tortillas, making sure it covers them evenly.
Bake
  1. Bake uncovered for 15-20 minutes until cheese is bubbly and slightly golden.
  2. Let rest for a few minutes before serving.
Garnish and Serve
  1. Garnish with fresh toppings like diced tomatoes, jalapeños, cilantro, and sour cream before serving.

Notes

For a richer flavor, consider roasting jalapeños beforehand. You can also prep the filling and sauce ahead of time to speed up dinner.
