  • 2 pounds Baby Yukon Gold potatoes, halved
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter, melted
  • 1 packet Ranch seasoning mix (about 1 ounce or 2 tablespoons)
  • 1/3 cup Fresh Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped Extra chopped parsley optional for garnish

Preparation
  1. Preheat your oven to 450°F and line a rimmed baking sheet with foil or parchment paper.
  2. Wash the Baby Yukon Gold potatoes well and slice each in half lengthwise.
  3. Toss the halved potatoes in a bowl with the olive oil and melted butter until coated.
  4. Sprinkle the ranch seasoning mix, grated Parmesan cheese, and chopped parsley over the potatoes and toss again.
Baking
  1. Spread the potatoes cut side down on the prepared baking sheet, ensuring they have space.
  2. Bake for 22 to 30 minutes until golden and tender. Do not stir during baking.
Serving
  1. Once baked, garnish with extra chopped parsley and serve warm.
  2. Optional: Squeeze lemon juice over the potatoes for extra flavor before serving.

Notes

Cut potatoes into roughly even sizes for uniform cooking. Pat dry before coating to help crispiness. Avoid overcrowding the baking sheet and skip stirring for best results.
