Method
Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper, leaving an overhang.
Make the Crust
- In a bowl, stir together graham cracker crumbs, sugar, and melted butter until the texture resembles damp sand. Press the mixture evenly into the bottom of the prepared pan.
Prepare the Cheesecake Filling
- Beat softened cream cheese until smooth. Add sugar, lemon zest, sour cream, flour, and vanilla extract, mixing until combined.
- Add eggs one at a time, gently mixing after each addition to avoid incorporating too much air.
Add the Raspberry Swirl
- Pour the cheesecake filling over the crust and spread evenly. Spoon dollops of raspberry pie filling on top and gently swirl with a knife.
Bake the Bars
- Bake for 30 to 35 minutes until the edges are set and the center jiggles slightly. Allow to cool on the counter.
Chill and Slice
- Transfer to the fridge and chill for at least 2 hours, or overnight for cleaner slices. Lift the bars out using the parchment overhang and slice into squares.
