Raspberry Lemon Cheesecake Bars

Ingredients
  

Crust
  • 1 cup Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Melted butter
Cheesecake Filling
  • 16 oz Full-fat cream cheese, softened Use low-fat for a lighter version, but richness will be affected.
  • 1 cup Granulated sugar
  • 2 tbsp Fresh lemon, zested
  • 1/2 cup Sour cream Greek yogurt can be used as a substitute.
  • 1/4 cup All-purpose flour Use gluten-free flour for a gluten-free version.
  • 1 tsp Vanilla extract
  • 3 large Large eggs Add eggs one at a time to prevent cracking.
Raspberry Layer
  • 1 cup Raspberry pie filling Fresh raspberries can be mashed and used instead.

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper, leaving an overhang.
Make the Crust
  1. In a bowl, stir together graham cracker crumbs, sugar, and melted butter until the texture resembles damp sand. Press the mixture evenly into the bottom of the prepared pan.
Prepare the Cheesecake Filling
  1. Beat softened cream cheese until smooth. Add sugar, lemon zest, sour cream, flour, and vanilla extract, mixing until combined.
  2. Add eggs one at a time, gently mixing after each addition to avoid incorporating too much air.
Add the Raspberry Swirl
  1. Pour the cheesecake filling over the crust and spread evenly. Spoon dollops of raspberry pie filling on top and gently swirl with a knife.
Bake the Bars
  1. Bake for 30 to 35 minutes until the edges are set and the center jiggles slightly. Allow to cool on the counter.
Chill and Slice
  1. Transfer to the fridge and chill for at least 2 hours, or overnight for cleaner slices. Lift the bars out using the parchment overhang and slice into squares.

Notes

Room temperature ingredients blend smoother. Cool gradually at room temperature before refrigerating for best results.
