  • 1 tablespoon honey, optional Adjust amount based on taste.
  • 1/4 teaspoon sea salt Sprinkle to taste.

Preparation
  1. Slice the watermelon into manageable wedges, remove the rind, and cut the flesh into 1-inch cubes.
  2. Place cubed watermelon into a large mixing bowl and remove any visible seeds.
  3. Wash the peaches, slice around the pit, and cut into cubes that match the size of the watermelon.
  4. Add peach cubes to the watermelon in the bowl.
  5. Peel and thinly slice the red onion; add to the fruit mixture.
  6. Rinse and chiffonade fresh mint leaves; sprinkle onto the fruit mixture.
  7. In a small bowl, whisk together lime juice and honey until smooth.
  8. Pour the dressing over the fruit mixture and gently fold everything together.
  9. Crumble the feta cheese over the salad, fold gently to combine, and sprinkle with sea salt.
  10. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
  11. Give the salad one final gentle toss right before serving.
