Dip Ingredients
  • 8 ounces Cream cheese, softened Let sit at room temperature for 30-40 minutes.
  • 1/2 cup Sour cream
  • 1/4 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Sweet pickle relish
  • 8 ounces Corned beef, chopped or shredded Preferably from the deli counter.
  • 1 cup Sauerkraut, squeezed dry Important to dry out properly to avoid a watery dip.
  • 1 1/2 cups Swiss cheese, shredded, divided Reserve half a cup for topping.
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon Black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F and prepare a shallow baking dish.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, ketchup, and sweet pickle relish. Mix until smooth.
  3. Gently fold in chopped corned beef, well-squeezed sauerkraut, one cup of Swiss cheese, Worcestershire sauce, and black pepper until evenly distributed.
Baking
  1. Spread the mixture into the prepared baking dish and top with the remaining Swiss cheese.
  2. Bake for 20 to 25 minutes until bubbly and golden on top.
  3. For a deeper color, broil for about one minute at the end, keeping a close watch.
Serving
  1. Let the dip rest for five minutes before serving to thicken.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat as needed, but avoid freezing as cream cheese doesn't hold up well.
