Preparation
- Preheat the oven to 350°F and lightly grease a 9x13-inch casserole dish.
- If cooking chicken, simmer chicken breasts in lightly salted water for 15-20 minutes, shred and set aside.
- Crush Ritz crackers in a zip-lock bag to medium crumbs.
- In a large mixing bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper; mix until smooth.
- Stir in shredded cheddar cheese into the creamy mixture.
- Fold the shredded chicken and optional vegetables into the creamy filling; add a handful of crushed Ritz crackers.
- Pour the chicken filling into the prepared casserole dish and spread evenly.
- Mix the remaining crushed Ritz crackers with melted butter and spread evenly on top of the casserole.
Baking
- Bake in the preheated oven for 25 to 30 minutes until golden brown and bubbly.
- Let the casserole rest for 5 minutes before serving.
Notes
Use rotisserie chicken for time-saving. Buttering the crackers is essential for flavor. Taste your filling before baking to adjust seasoning.
