  • 3 cups cooked shredded chicken Rotisserie chicken is a great time-saver.
  • 1 sleeve Ritz crackers, crushed Crush to medium crumbs for best texture.
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese Sharp cheddar recommended for flavor.
  • 1/2 cup melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup frozen peas or broccoli (optional) Great for adding vegetables.

Method
 

Preparation
  1. Preheat the oven to 350°F and lightly grease a 9x13-inch casserole dish.
  2. If cooking chicken, simmer chicken breasts in lightly salted water for 15-20 minutes, shred and set aside.
  3. Crush Ritz crackers in a zip-lock bag to medium crumbs.
  4. In a large mixing bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper; mix until smooth.
  5. Stir in shredded cheddar cheese into the creamy mixture.
  6. Fold the shredded chicken and optional vegetables into the creamy filling; add a handful of crushed Ritz crackers.
  7. Pour the chicken filling into the prepared casserole dish and spread evenly.
  8. Mix the remaining crushed Ritz crackers with melted butter and spread evenly on top of the casserole.
Baking
  1. Bake in the preheated oven for 25 to 30 minutes until golden brown and bubbly.
  2. Let the casserole rest for 5 minutes before serving.

Notes

Use rotisserie chicken for time-saving. Buttering the crackers is essential for flavor. Taste your filling before baking to adjust seasoning.
