- In a large bowl, drizzle the chopped kale with a tablespoon of olive oil and massage the leaves for 2 to 3 minutes until softened.
Assembly
- In a small bowl, whisk together the white balsamic vinegar, honey, extra virgin olive oil, minced garlic, and Dijon mustard. Season with salt and pepper.
- Add the massaged kale to a large serving bowl as the base layer.
- Top with roasted beets, dried cranberries, walnuts, and crumbled goat cheese.
- Drizzle the balsamic dressing over the salad just before serving and toss gently.
