  • 4 cups kale, stems removed and roughly chopped
  • 2 medium beets, washed and trimmed Wear gloves when handling to avoid staining fingers.
  • 1 tablespoon olive oil, for massaging the kale
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, roughly chopped Can swap with pumpkin seeds or slivered almonds.
  • 2 ounces goat cheese, crumbled Can substitute with feta or omit for dairy-free.
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon honey Can swap for maple syrup for vegan option.
  • 3 tablespoons extra virgin olive oil, for the dressing
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with foil.
  2. Slice the trimmed beets into even wedges, drizzle lightly with olive oil and a pinch of salt, and roast for 40 to 50 minutes.
  3. Once tender, let the beets cool for 10 minutes, then peel and slice into bite-sized pieces.
  4. In a large bowl, drizzle the chopped kale with a tablespoon of olive oil and massage the leaves for 2 to 3 minutes until softened.
Assembly
  1. In a small bowl, whisk together the white balsamic vinegar, honey, extra virgin olive oil, minced garlic, and Dijon mustard. Season with salt and pepper.
  2. Add the massaged kale to a large serving bowl as the base layer.
  3. Top with roasted beets, dried cranberries, walnuts, and crumbled goat cheese.
  4. Drizzle the balsamic dressing over the salad just before serving and toss gently.
Serving
  1. Serve immediately for best freshness.

Notes
