Ingredients
  

For the cookie dough
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the cheesecake filling
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
For the topping
  • 1/2 cup thick caramel sauce
  • Flaky sea salt, for sprinkling

Method
 

Preparation
  1. Beat the softened cream cheese with sugar and vanilla until smooth. Chill in the freezer for 15 minutes.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, beat the softened butter with both sugars for 2 to 3 minutes until pale and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until fully combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low until just combined.
  6. Scoop dough, flatten, and place a teaspoon of chilled cheesecake filling in the center. Fold and roll into balls.
  7. Chill the stuffed dough balls in the refrigerator for 20 to 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C). Space chilled cookies on a parchment-lined baking sheet.
  2. Bake for 10 to 12 minutes until edges are light golden and centers are still soft. Immediately press a spoon into the center to form a well.
  3. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  4. Once slightly cooled, spoon or pipe warm caramel into the well and sprinkle with flaky sea salt.

Notes

Ensure butter and cream cheese are at room temperature for easier mixing. Measure flour by weight for the best results. Experiment with ingredients like chopped nuts or chocolate chips.
